STIR FRIED JAPANESE UDON NOODLES WITH CHICKEN

INGREDIENTS:
Pre-cooked udon noodles
Chicken, sliced
5 cloves of garlic
Cabbage
Choy sum or any other green vegetables
Chili flakes
Light soy sauce
Dark soy sauce
Salt
Sugar
Corn starch
Sesame oil
Sesame seeds
Preparations:
marinade the chicken
1.First marinade the chicken slices with salt, light soy sauce, dark soy sauce, little bit of sugar, white pepper powder , black pepper powder and corn starch. Set aside.
2. Cook the udon noodles in a pot of boiling water according the package instruction. Strain it and run the noodles under cold tap through a colander immediately.
3. In a pan, toast some sesame seeds and Set aside.
Method:
In the same pan, add some oil and stir fry the marinated chicken. Once the chicken is cooked, remove it and set aside.
Now in the same pan again, add the garlic and saute for a minute.
Next, add the sliced mushrooms, followed by Choy sum and cabbage. Sprinkle some salt. For little spiciness, I’ve added some chili flakes(optional).Stir it well and let it cook till the vegetables softens.
Add soy sauce and dark soy sauce to a desired amount. Toss altogether in a medium heat.
Add the udon noodles and black pepper powder. Stir it well and cook for about 4 minutes in a medium flame. Lastly garnish with the toasted sesame seeds on top for extra nutty flavor . Turn off the flame.
